Method
1. Add dried yeast, granulated sugar and milk to a clean large mixing bowl
2. Mix until combined
3. Mix in the flour
4. Let rest - 10 min
5. Add all purpose flour, buckwheat flour and salt to a clean medium bowl; whisk briefly then set aside
6. Add milk to the yeast mixture
7. Combine the dry and wet ingredients
8. Add unsalted butter to a clean small glass bowl
9. Melt in microwave - low heat
10. Add the melted butter to batter, whisk batter until well combined and cover
11. Let rise until doubled - approx 2 hr
12. Stir, add egg yolks to the batter and mix again
13. Add egg whites to a clean medium bowl
14. Whisk until stiff peaks form
15. Fold egg whites into batter gently until combined
16. Heat unsalted butter in a skillet pan
17. Add small ladles of batter into the pan and fry until golden brown - approx 2 min
18. Serve immediately
