Tangy, creamy garlic and avocado dressing is the star of this delicious chicken sandwich. Halve three chicken breasts lengthwise to make 6 sandwiches.

Step preview

  1. Pre-heat oven - 200°C
  2. Add chicken breast to a clean baking dish
  3. Brush with olive oil evenly
  4. Season with salt & pepper generously
  5. Roast - 8 min, 200°C, middle rack
  6. Let rest and continue
  7. Add garlic clove, fresh basil, avocado, lemon juice and golden balsamic vinegar to a clean blender jug
  8. Blitz until combined
  9. Add greek yogurt, honey, black pepper and sea salt to the blender jug
  10. Blend until smooth
  11. Slice rustic french bread into the blender jug
  12. Add baby spinach to the blender jug
  13. Assemble
