Tangy, creamy garlic and avocado dressing is the star of this delicious chicken sandwich. Halve three chicken breasts lengthwise to make 6 sandwiches.

    Method

  • 1. Pre-heat oven - 199°C
  • 2. Add chicken breast to a clean baking dish
  • 3. Brush with olive oil evenly
  • 4. Season with salt & pepper generously
  • 5. Place chicken on the hot grill rack and cook 8 to 10 minutes, or until chicken loses its pink color throughout and reaches an internal temperature of 165° F
  • 6. Remove the chicken from grill and let it stand 5 minutes
  • 7. Meanwhile, prepare the green goddess sauce: Add garlic clove, fresh basil leaves, avocado, lemon juice and golden balsamic vinegar to a clean blender jug
  • 8. Blitz until combined
  • 9. Add greek yogurt, honey, black pepper and sea salt to the blender jug
  • 10. Blend until smooth
  • 11. Build sandwiches using buns, spinach, chicken and Green Goddess Sauce
