Method
1. Pre-heat oven - 199°C
2. Add chicken breast to a clean baking dish
3. Brush with olive oil evenly
4. Season with salt & pepper generously
5. Place chicken on the hot grill rack and cook 8 to 10 minutes, or until chicken loses its pink color throughout and reaches an internal temperature of 165° F
6. Remove the chicken from grill and let it stand 5 minutes
7. Meanwhile, prepare the green goddess sauce: Add garlic clove, fresh basil leaves, avocado, lemon juice and golden balsamic vinegar to a clean blender jug
8. Blitz until combined
9. Add greek yogurt, honey, black pepper and sea salt to the blender jug
10. Blend until smooth
11. Build sandwiches using buns, spinach, chicken and Green Goddess Sauce
