Step preview

  1. Add ground flaxseed and water to a clean small bowl
  2. Mix with teaspoon then set aside
  3. Add dates and water to a clean medium bowl
  4. Soak and continue - approx 10 min
  5. Add all purpose flour, baking soda, ground cinnamon, sea salt and demerara sugar to a clean large mixing bowl
  6. Whisk briefly until combined
  7. Add apple cider vinegar and almond milk to a clean glass measuring cup
  8. Whisk vigorously until frothy
  9. Add coconut oil to the wet ingredients
  10. Transfer mixture to wet ingredients
  11. Transfer wet ingredients to batter bit by bit
  12. Stir until just combined
  13. Add walnuts to the batter
  14. Drain soaked fruit
  15. Transfer soaked fruit to batter
  16. Fold gently
  17. Grease a clean loaf pan
  18. Transfer batter to loaf pan
  19. Bake until skewer tests clean - 40 min, 175°C
  20. Let cool completely
  21. Serve
