Method
1. Pre-heat oven - 180°C / 355°F
2. Add orange juice, soy sauce, sesame oil, olive oil, ginger, garlic clove, maple syrup and cayenne pepper to a clean small bowl
3. Mix until blended then set aside
4. Add tofu to a clean baking pan and pour the sauce over the tofu cubes
5. Bake - 15 min, 180°C / 355°F
6. Stir gently and bake until browned - 15 min, 180°C / 355°F
7. Transfer tofu to plate and reserve liquid
8. In a small bowl combine the marinade, lime, orange juice, rice vinegar and sea salt
9. Cook soba noodles in a clean large saucepan then set aside
10. Add broccoli and water to the large saucepan
11. Simmer and strain - 30 sec
12. Rinse until cool
13. Add carrot, white cabbage, kale, cilantro, fresh basil leaves and sesame seeds to a clean large mixing bowl
14. Cover with soba noodles
15. Add broccoli
16. Pour marinade into salad and mix
17. Top with the gorgeous baked tofu
