Step preview

  1. Add milk, granulated sugar, ground cardamom and active dried yeast to a clean large mixing bowl
  2. Mix briefly until combined
  3. Let rest - 10 min
  4. Add egg to the dough
  5. Mix until combined
  6. Add all purpose flour and salt to the dough
  7. Mix until dough forms - paddle attachment
  8. Knead - 2 min, dough hook
  9. Add unsalted butter to a clean small bowl
  10. Transfer content of small bowl to dough bit by bit while mixing
  11. Transfer dough to medium bowl and cover
  12. Let rise until doubled - 30 min
  13. Punch down and cover
  14. Let rise until doubled - 30 min
  15. Line a clean baking sheet with parchment paper
  16. Turn out large mixing bowl on lightly-floured surface
  17. Roll out into logs
  18. Plait content of large mixing bowl on baking sheet and cover
  19. Let rise until springy to touch - 30 min
  20. Pre-heat oven - 190°C
  21. Add ground cardamom, heavy cream and egg yolk to a clean small bowl
  22. Whisk together
  23. Brush until coated
  24. Bake until golden brown - 20 min, 190°C
  25. Serve
