Method
1. Add dark chocolate to a clean heatproof bowl
2. Heat slowly until completely melted while stirring occasionally
3. Stir until smooth
4. Add butter and mix until glossy
5. Add sugar and egg to a clean stand mixer bowl
6. Mix - 2 min, whisk attachment
7. Add chocolate mixture and mix - 2 min, medium speed
8. Fit in paddle attachment
9. Add nuts and salt and mix until combined - 30 sec, low speed
10. Simply place some plastic wrap over the dough
11. Chill in fridge - approx 4 hr
12. Pre-heat oven - 175°C / 350°F
13. Line a clean baking sheet with parchment paper
14. Add sugar to a clean small bowl
15. Form dough into balls
16. Roll each ball in a coating of sugar
17. Place cookie bites on a pan lined with parchment paper or a silicone baking mat
18. Bake for 7 min, 175°C / 350°F
19. Let cool - approx 5 min
20. Serve
