  • Dark chocolate icon

  • Sugar icon

    Method

  • 1. Add dark chocolate to a clean heatproof bowl
  • 2. Heat slowly until completely melted while stirring occasionally
  • 3. Stir until smooth
  • 4. Add butter and mix until glossy
  • 5. Add sugar and egg to a clean stand mixer bowl
  • 6. Mix - 2 min, whisk attachment
  • 7. Add chocolate mixture and mix - 2 min, medium speed
  • 8. Fit in paddle attachment
  • 9. Add nuts and salt and mix until combined - 30 sec, low speed
  • 10. Simply place some plastic wrap over the dough
  • 11. Chill in fridge - approx 4 hr
  • 12. Pre-heat oven - 175°C / 350°F
  • 13. Line a clean baking sheet with parchment paper
  • 14. Add sugar to a clean small bowl
  • 15. Form dough into balls
  • 16. Roll each ball in a coating of sugar
  • 17. Place cookie bites on a pan lined with parchment paper or a silicone baking mat
  • 18. Bake for 7 min, 175°C / 350°F
  • 19. Let cool - approx 5 min
  • 20. Serve
