Soft Chocolate Hazelnut Cookie Bites

These little 2 bite delights are a hybrid of a molten chocolate cake and a cookie. The creamy, salty centers beg for a glass of milk. I first made a version of these when I was at Wolfgang Puck and it quickly turned into one of my favorites.

Step preview

  1. Add hazelnut flour and salt to a clean small bowl then set aside
  2. Add dark chocolate to a clean heatproof bowl
  3. Heat slowly until completely melted while stirring occasionally
  4. Stir until smooth
  5. Add butter to the chocolate mixture
  6. Mix until glossy
  7. Add sugar and egg to a clean stand mixer bowl
  8. Mix - 2 min, whisk attachment
  9. Transfer chocolate mixture to dough
  10. Mix - 2 min, medium speed
  11. Prepare - paddle attachment
  12. Transfer nuts to dough
  13. Mix until combined - 30 sec, low speed
  14. Cover with plastic wrap
  15. Chill in fridge - approx 4 hr
  16. Pre-heat oven - 175°C
  17. Line a clean baking sheet with parchment paper
  18. Add sugar to a clean small bowl
  19. Form dough into balls
  20. Roll dough in sugar mixture one by one
  21. Transfer content of stand mixer bowl to baking sheet
  22. Bake - 7 min, 175°C
  23. Let cool - approx 5 min
  24. Serve
