Method
1. Pre-heat oven - 170°C
2. Grease 2 clean round pans
3. Line with parchment paper
4. Add salted butter and granulated sugar to a clean large mixing bowl
5. Cream until light and fluffy
6. Add egg to the batter one by one while mixing
7. Add gluten-free flour and gluten-free baking powder to a clean medium bowl
8. Sift dry ingredients into batter while mixing
9. Transfer batter to 2 round pans
10. Bake until skewer tests clean - 25 min
11. Let cool
12. Add salted butter, powdered sugar and orange to a clean large mixing bowl
13. Beat until fluffy
14. Layer round pans
15. Spread with jam
16. Garnish with blackberries and raspberries
