Method
1. Add all purpose flour, granulated sugar, salt and unsalted butter to a clean medium bowl
2. Squish butter chunks between your fingers quickly without melting butter
3. Add water and mix quickly until dough forms
4. Transfer dough to lightly floured surface and knead quickly until mixture comes together
5. Divide into halves and roll out until 1/8" (5mm) thick
6. Transfer half of the dough to pie dish then set aside
7. Roll out second pie dough until 1/8" (5mm) thick then set aside
8. In a a clean large mixing bowl mix together granulated sugar, apple, ground cinnamon, nutmeg, tapioca starch, salt, vanilla extract and lemon juice
9. Transfer filling to pie dish
10. Carefully lay top crust over the pie dish with the apple filling and crimp edges
11. Brush with egg
12. Bake until golden brown and let cool - 45 min, 190°C / 375°F
13. Let rest - approx 4 hr
