This is the perfect classic apple pie recipe, with an easy-to-make, ultra-flaky crust adapted from Serious Eats, and the perfect filling. I've been making pies for many years now and my brother has always been happy to taste test in my search to find the best crust and filling recipes. This year at Thanksgiving we both agreed that the search was over! (For the Holiday Recipe Swap.)

Step preview

  1. Add all purpose flour, granulated sugar, salt and unsalted butter to a clean medium bowl
  2. Press quickly
  3. Add water to the dough
  4. Mix quickly until dough forms
  5. Transfer dough to lightly floured surface
  6. Knead quickly until mixture comes together
  7. Divide into halves
  8. Roll out quickly until 1/8" (5mm) thick
  9. Transfer half of pie crust to pie dish then set aside
  10. Roll out quickly until 1/8" (5mm) thick then set aside
  11. Add granulated sugar, apple, ground cinnamon, nutmeg, tapioca starch, salt, vanilla extract and lemon juice to a clean large mixing bowl
  12. Mix carefully until coated
  13. Transfer filling to pie dish
  14. Transfer half of pie crust to pie dish
  15. Brush with egg
  16. Bake until golden brown and let cool - 45 min, 190°C
  17. Let rest - approx 4 hr
