This is the perfect classic apple pie recipe, with an easy-to-make, ultra-flaky crust adapted from Serious Eats, and the perfect filling. I've been making pies for many years now and my brother has always been happy to taste test in my search to find the best crust and filling recipes. This year at Thanksgiving we both agreed that the search was over! (For the Holiday Recipe Swap.)

Step preview

  1. Get a clean medium bowl
  2. Add all purpose flour
  3. Add granulated sugar
  4. Add salt
  5. Add cold, cubed unsalted butter
  6. Press quickly
  7. Add cold water
  8. Mix quickly until dough forms
  9. Transfer dough to lightly floured surface
  10. Knead quickly until mixture comes together
  11. Divide into halves
  12. Roll out quickly until 1/8" (5mm) thick
  13. Transfer half of pie crust to pie dish then set aside
  14. Roll out quickly until 1/8" (5mm) thick then set aside
  15. Get a clean large mixing bowl
  16. Add granulated sugar
  17. Add sliced, chopped apple
  18. Add ground cinnamon
  19. Add ground nutmeg
  20. Add tapioca starch
  21. Add salt
  22. Add vanilla extract
  23. Add lemon juice
  24. Mix carefully until coated
  25. Transfer filling to pie dish
  26. Transfer half of pie crust to pie dish
  27. Brush with beaten egg
  28. Bake until golden brown and let cool - 45 min, 190°C
  29. Let rest - approx 4 hr
