Impress your guests with this tasty alternative to the traditional pineapple glazed ham (or roast gammon, as some like to call it). When purchasing a bone-in cured ham, look for one that is firm and has rosy pink meat. Use leftover ham bone to flavour soups or stews.

Step preview

  1. Pre-heat oven - 160°C
  2. Add ham to a clean large roasting dish
  3. Score
  4. Add water to the meat
  5. Cover with foil
  6. Bake - 2 hr, 160°C
  7. Add maple sugar, wholegrain mustard, apple cider vinegar and pomegranate juice to a clean saucepan
  8. Heat until just boiling then reduce heat
  9. Simmer until thickened - approx 6 min
  10. Uncover meat
  11. Increase - 190°C
  12. Baste
  13. Bake - 40 min, 190°C
  14. Let rest - approx 20 min
  15. Slice with chef's knife
  16. Serve immediately
