    Method

  • 1. Steam beetroots until tender - approx 15 min
  • 2. Pre-heat oven - 175°C / 350°F
  • 3. Add steamed beets, canned black beans, egg and coconut oil to a clean food processor bowl
  • 4. Blitz until smooth
  • 5. Add cocoa powder, brown sugar, baking powder, vanilla extract and salt to the batter
  • 6. Blitz until combined
  • 7. Mix in dark chocolate chips
  • 8. Grease a clean muffin pan
  • 9. Transfer batter to muffin pan
  • 10. Bake - 30 min, 175°C / 350°F
  • 11. Carefully remove brownies from muffin tray and let cool
  • 12. Serve
