Pickled red onion is a staple in my refrigerator. I most frequently use it on tacos, carnitas, salads and as a garnish on vegetable side dishes. It adds the perfect amount of acid to liven up any dish and a great pop of color.

Ingredients

  • Red wine vinegar icon

    250ml (1 cup)

    57g (about 4½ tbsp)

    17g (about 2¾ tsp)

Step preview

  1. Add red wine vinegar, granulated sugar and salt to a clean saucepan
  2. Cook until just boiling then set aside - high heat
  3. Add red onion to a clean jar
  4. Transfer dressing to jar
  5. Marinate in fridge - approx 8 hr
  6. Serve
