Despite being a vegetarian chili, you won’t miss the meat here. The accompaniments are what make this chili that much better, so definitely go with the sprinkling of scallions, cilantro, and a few avocado slices. The juxtaposition of the warm chili and the cold sour cream is also lovely, so don’t skip out on that. If you’re a bit apprehensive about heat, leave out the cayenne pepper and halve the amount of chili powder called for in the recipe. Another route is to use 2 tablespoons of chipotle chili powder instead of the regular chili powder. About 3 tablespoons of your favorite smoky Mexican chipotle seasoning would also work as a great alternative to the cumin, cayenne pepper, and chili powder called for in the recipe.

  1. Prep and set aside onion: chopped
  2. Prep and set aside red bell pepper: coarsely chopped
  3. Prep and set aside garlic clove: chopped
  4. Get a clean large saucepan
  5. Add olive oil
  6. Heat on medium heat
  7. Add prepared onion
  8. Add prepared red bell pepper
  9. Add prepared garlic clove
  10. Sauté for approx 10min until softened
  11. Add chili powder
  12. Add dried oregano
  13. Add ground cumin
  14. Add cayenne pepper
  15. Stir for approx 2min
  16. Add canned black beans
  17. Add tomato sauce
  18. Cook until just boiling then reduce heat
  19. Simmer for 15min on low heat until thickened
  20. Serve
  21. Garnish with cilantro
  22. Garnish with sour cream
