Method
1. Pre-heat oven - 175°C / 350°F
2. Line a clean loaf pan with parchment paper
3. Add rolled oats, muscovado sugar, ground cinnamon, nutmeg, ground cinnamon and fine sea salt to a clean medium bowl
4. Mix briefly then set aside
5. Add all purpose flour, cane sugar, wheat germ, almond flour, muscovado sugar, ground cinnamon, baking powder, sea salt, ground ginger, nutmeg and rolled oats to a clean large mixing bowl
6. Mix briefly then set aside
7. Add greek yogurt, milk, unsalted butter and egg to a clean medium bowl
8. Whisk until thoroughly combined
9. Transfer wet ingredients to the flour mixture and mix until combined
10. Add apple, walnuts, golden raisins and dried cranberries to the batter
11. Stir briefly until well combined
12. Transfer batter to loaf pan and generously coat with your oat topping
13. Bake loaf pan - 50 min, 175°C / 350°F
14. Wrap with foil and let rest - approx 12 hr
15. Serve with salted butter or honeyed almond butter and a few thin apple slices
