Many will find this recipe quite unusual, but I assure you it comes together with great ease and tastes absolutely like Christmas in a glass. It’s best served whilst it’s quite warm. For those that aren’t familiar with mulled wine (or if you prefer a nicer presentation), it’s nice served similar to an old-fashioned punch– with lots of citrus slices, along with the citrus peel and spices, and a ladle. For the sake of not breaking the glass container (I used a trifle bowl here) you house the mulled wine in, be sure that the mixture is only slightly warm when served; it tastes delicious even after it’s cooled completely.

Step preview

  1. Add caster sugar, clementine, lime, lemon and clementine to a clean large saucepan
  2. Heat - medium heat
  3. Add cloves, cinnamon stick, bay leaves, nutmeg, vanilla bean pod and red wine to the large saucepan
  4. Simmer until sugar has dissolved and bring to a boil
  5. Boil constantly until syrupy then reduce heat - approx 5 min
  6. Add red wine and star anise pod to the large saucepan
  7. Heat gently then set aside - approx 5 min
  8. Serve immediately
