Many will find this recipe quite unusual, but I assure you it comes together with great ease and tastes absolutely like Christmas in a glass. It’s best served whilst it’s quite warm.

    Method

  • 1. Add caster sugar, clementine, lime, lemon and clementine to a clean large saucepan
  • 2. Heat - medium heat
  • 3. Add cloves, cinnamon stick, bay leaves, nutmeg, vanilla bean pod and red wine
  • 4. Simmer until sugar has dissolved and bring to a boil
  • 5. Boil constantly until syrupy then reduce heat - approx 5 min
  • 6. Add red wine and star anise pod
  • 7. Heat gently then set aside - approx 5 min
  • 8. Serve immediately
