Method
1. Grease 2 clean baking sheets
2. Add salted butter and granulated sugar to a clean large mixing bowl
3. Cream together until smooth
4. Add chocolate chips and mix until combined
5. Add peppermint extract and egg and beat until combined
6. Add all purpose flour and mix until combined
7. Chill in fridge - 30 min
8. Dust work surface with all purpose flour
9. Roll out the dough until 1/4" thick
10. Cut out cookie shapes
11. Place cookies on 2 baking sheets
12. Chill in fridge - 25 min
13. Pre-heat oven - 170°C / 340°F
14. Bake - 20 min, 170°C / 340°F
15. Let cool on the baking sheet - approx 5 min
16. Transfer cookies onto cooling rack
17. Dust with icing sugar or melted chocolate
