    Method

  • 1. Pre-heat oven - 180°C / 355°F
  • 2. Add green bell pepper, red onion, cherry tomatoes, potato, garlic clove, fresh rosemary, dried oregano, salt, black pepper and olive oil to a clean large roasting dish
  • 3. Toss until coated
  • 4. Bake - 30 min, 180°C / 356°F
  • 5. Add rack of lamb to the large roasting dish
  • 6. Bake - 20 min, 180°C / 356°F
  • 7. Serve
