An easy dinner recipe that saves on time but is still full on flavour
Ingredients
Green bell pepper1chopped
Red onion1chopped
Cherry tomatoes6
Potato4chopped
Garlic clove1chopped
Fresh rosemary1 tablespoon
Dried oregano1 teaspoon
Saltas needed
Black pepperas needed
Olive oil3 tablespoons
Rack of lamb2
Method
1. Pre-heat oven - 180°C / 355°F
2. Add green bell pepper, red onion, cherry tomatoes, potato, garlic clove, fresh rosemary, dried oregano, salt, black pepper and olive oil to a clean large roasting dish
3. Toss until coated
4. Bake - 30 min, 180°C / 356°F
5. Add rack of lamb to the large roasting dish
6. Bake - 20 min, 180°C / 356°F
7. Serve
