  1. Pre-heat - 180°C
  2. Get a clean large roasting dish
  3. Add chopped green bell pepper
  4. Add chopped red onion
  5. Add cherry tomatoes
  6. Add chopped potato
  7. Add chopped garlic clove
  8. Add fresh rosemary
  9. Add dried oregano
  10. Add salt
  11. Add black pepper
  12. Add olive oil
  13. Toss until coated
  14. Bake - 30 min, 180°C
  15. Add rack of lamb
  16. Bake - 20 min, 180°C
  17. Serve
