Baked Hake with Crushed Potatoes, Nutmeg Spinach and Lemon Butter Sauce

Perfectly seasonal fish dish, that is easy to scale up for a big crowd or make it, as I have done here, just for one.

    Method

  • 1. Pre-heat oven - 190°C
  • 2. Add potato to a clean cutting board and chop into quarters
  • 3. Transfer potatoes to saucepan and add water
  • 4. Boil - 10 min
  • 5. Drain with sieve and transfer potatoes to baking pan
  • 6. Use a potato masher to crush the potatoes leaving lots of yummy bits to crisp up
  • 7. Add olive oil, black pepper and salt to the baking pan
  • 8. Bake - 15 min, 190°C
  • 9. Remove from the oven and add hake fillet
  • 10. Bake - 10 min
  • 11. Add olive oil, scallion, garlic clove, baby spinach and nutmeg to a clean frying pan
  • 12. Panfry - approx 5 min
  • 13. Transfer vegetables to plate and arrange the fish
  • 14. Add butter and lemon and melt
  • 15. Drizzle fish with sauce
