    Method

  • 1. Pre-heat oven - 190°C / 375°F
  • 2. Add bran cereal, cultured lowfat buttermilk, unsweetened applesauce, sugar substitute, egg, canola oil and molasses to a clean medium bowl
  • 3. Mix until combined and set aside
  • 4. Add all purpose flour, baking powder and baking soda to a clean large mixing bowl
  • 5. Mix until combined
  • 6. Transfer mixture to dry ingredients
  • 7. Mix slowly until combined
  • 8. Fold in blueberries
  • 9. Line a clean muffin pan with paper muffin cups
  • 10. Pour batter into muffin pan
  • 11. Bake until skewer tests clean and let cool - 18 min
