Ingredients
Cherry tomatoes200 ghalved
Baby spinach100 g
Onion140 gfinely sliced
Garlic clove3finely sliced
Fresh chili1finely chopped
Spaghetti200 g
Extra virgin olive oil2 tablespoons
Water600 ml
Pecorino cheese50 g
Fresh basil leaves11 g
Sea salt1 pinch
Black pepper1 pinchfreshly ground
Method
1. Add cherry tomatoes, baby spinach, onion, garlic clove, fresh chili, spaghetti, extra virgin olive oil and water to a clean large saucepan
2. Heat until boiling
3. Cook while stirring occasionally - 9 min
4. Stir thoroughly and turn off heat
5. Add pecorino cheese and fresh basil leaves
6. Stir until combined
7. Season with sea salt and black pepper
