This is for the almond lover in your life. Don't go near this scrumptious loaf unless you LOVE almond and all things marzipan. A quick and easy last minute treat, that can be whipped up in under 1 hour, perfect when a surprise guest is on the way over. I also like to call this the 100 gram cake, as (nearly) everything in the ingredients list is... you guessed it... 100 grams.

Step preview

  1. Pre-heat
  2. Get a clean medium bowl
  3. Add ground almonds
  4. Add caster sugar
  5. Add gluten-free flour
  6. Add melted butter
  7. Add almond extract
  8. Add egg
  9. Mix until well combined
  10. Grease a clean loaf pan
  11. Add blueberries
  12. Transfer batter to loaf pan
  13. Bake - 35 min, 200°C
  14. Turn out
