This is for the almond lover in your life. Don't go near this scrumptious loaf unless you LOVE almond and all things marzipan. A quick and easy last minute treat, that can be whipped up in under 1 hour, perfect when a surprise guest is on the way over. I also like to call this the 100 gram cake, as (nearly) everything in the ingredients list is... you guessed it... 100 grams.

Step preview

  1. Pre-heat oven
  2. Add ground almonds, caster sugar, gluten-free flour, butter, almond extract and egg to a clean medium bowl
  3. Mix until well combined
  4. Grease a clean loaf pan
  5. Add blueberries to the loaf pan
  6. Transfer batter to loaf pan
  7. Bake - 35 min, 200°C
  8. Turn out
