Lemon garlic chicken with potatoes is an excellent option when you do not want to fuss in the kitchen. One pan is all you need. The ingredients are simple to prepare and will be very quick to throw together. I usually use skin-on, bone-in chicken thighs because they are very moist and flavourful. There is not a lot of overpowering flavours to this dish, so feel free to add more garlic and lemon. Other nice additions would be 1 Teaspoon of Sweet Paprika or a little (1/4 Teaspoon) of Cayenne Pepper for heat.

Step preview

  1. Pre-heat oven - 200°C
  2. Prepare a clean ceramic baking dish and set aside
  3. Add olive oil, salt, black pepper, garlic clove, lemon zest and dried oregano to a clean small bowl
  4. Stir until well combined
  5. Add potato, onion and chicken thighs to a clean medium bowl
  6. Transfer spices to chicken
  7. Mix until coated
  8. Transfer chicken to ceramic baking dish
  9. Cook - 30 min, 200°C, middle rack
  10. Broil until browned
  11. Remove
  12. Add lemon juice to the ceramic baking dish
  13. Serve
