Ingredients
Baby potato1.15 kgrinsed, halved
Olive oil2 tablespoons
Balsamic vinegar2 tablespoons
Fresh rosemary2 tablespoonsminced
Kosher salt½ teaspoon
Black pepper1 pinch
Method
1. Pre-heat oven - 200°C
2. Prepare a clean medium bowl
3. Add baby potato to the medium bowl
4. Pat dry with paper towels
5. Add olive oil, balsamic vinegar, fresh rosemary, kosher salt and black pepper to the potatoes
6. Toss thoroughly until coated
7. Transfer potatoes to baking sheet
8. Roast until golden brown - approx 45 min, 200°C
