Sous Vide Pork with Crispy Noodle Salad

This salad! OH my. It is sooo good. And we are talking sous vide on the pork. So learn something new and get your pork on!



  • Napa cabbage icon
    Napa cabbage

    ½ (about 1 g)finely sliced

  • Green onion icon
    Green onion

    4 (about 60 g)finely sliced

  • Red chili icon
    Red chili

    as neededfinely sliced

  • Pork filet icon
    Pork filet

    400 g (about 1)

  • White wine vinegar icon
    White wine vinegar

    1 tablespoon (about 15 ml)

  • Soy sauce icon
    Soy sauce

    2 tablespoons (about 30 ml)

  • Sesame oil icon
    Sesame oil

    1 tablespoon (about 15 ml)

  • Water icon

    500 ml (about 2 cups)

  • Extra virgin olive oil icon
    Extra virgin olive oil

    as needed

  • Slivered almonds icon
    Slivered almonds

    100 g (about 1 cup)

  • White wine vinegar icon
    White wine vinegar

    40 g (about 2 ⅝ tablespoons)

  • Crunchy chow mein noodles icon
    Crunchy chow mein noodles

    100 g (about ½ cup)


  • 1. Place pork in a stasher bag along with the other ingredients
  • 2. Close bag and shake until pork is coated
  • 3. Refrigerate for at least 1 hour
  • 4. Add water to the Thermomix bowl and set varoma into position
  • 5. Put stasher bag into the varoma dish
  • 6. Steam for 25 min, Varoma, speed 2
  • 7. Remove pork from the stasher bag and place onto a plate
  • 8. Discard juice or reserve for another use
  • 9. Add a little EVOO to a frying pan
  • 10. Brown the steamed pork fillet for a couple minutes until evenly browned
  • 11. Rest for 10 minutes before slicing
  • 12. Place cabbage, spring onions and almonds into a large bowl
  • 13. Toss to combine
  • 14. Mix together remaining ingredients in a small bowl to combine, pour over salad
  • 15. Add sliced pork and crispy noodles just before serving
  • 16. Garnish with additional chili slices if desired
