    METHOD


  • 1. Add sea salt, white pepper, black pepper, fennel seeds, cumin seeds, cloves, cinnamon stick and coriander seeds to a clean frying pan
  • 2. Heat - medium heat
  • 3. Toast until fragrant and just smoking, then let cool slightly
  • 4. Blitz - approx 1 min, speed 9
  • 5. Stop and scrape down sides of bowl and lid and repeat
  • 6. Blitz - approx 1 min, speed 9
  • 7. Add the rest of the ingredients other than coconut milk
  • 8. Blend, adding a little evoo and water to loosen up the mixture and help create a paste
  • 9. Add extra virgin olive oil to the frying pan
  • 10. Tip the mixture out into the frying pan
  • 11. Toast until fragrant - medium heat
  • 12. Return this mixture to the thermomix bowl and add the coconut milk
  • 13. Cook - approx 20 min, 100°C, speed 1
  • 14. You can now use as directed or store in a sterilised sealed jar in the fridge until use
