A super easy, single pan, all-in-one dinner. The potatoes go in the oven first, while you mix and season the chicken pieces, zucchini, cherry tomatoes and onions. Then add them to the pan, and continue cooking until the chicken is done and the potatoes are crisp on top and golden.

  1. Pre-heat - 230°C
  2. Add baby potato, olive oil and sea salt to a clean large mixing bowl and mix
  3. Transfer vegetables to baking sheet
  4. Roast until softened - 15 min, 230°C
  5. Add chicken pieces, zucchini, onion, cherry tomatoes, olive oil, fresh thyme, lemon zest and sea salt to a clean large mixing bowl and mix
  6. Transfer chicken to baking sheet
  7. Roast until golden brown - 20 min, 230°C
  8. Serve
