    Method

  • 1. Pre-heat oven - 230°C
  • 2. Add baby potato, olive oil and sea salt to a clean large mixing bowl and mix
  • 3. Transfer vegetables to baking sheet
  • 4. Roast until softened - 15 min, 230°C
  • 5. Add chicken pieces, zucchini, onion, cherry tomatoes, olive oil, fresh thyme, lemon zest and sea salt to a clean large mixing bowl and mix
  • 6. Transfer chicken to baking sheet
  • 7. Roast until golden brown - 20 min, 230°C
  • 8. Serve
