I love Kefir! It's wonderful for digestion and is known for its probiotic properties. This ice cream is the perfect hybrid of frozen yogurt and ice cream. Its very light, creamy, tart and pairs perfectly with late summer berries.

Step preview

  1. Get a clean saucepan
  2. Add milk
  3. Add heavy cream
  4. Heat until bubbles form and turn off heat - medium heat
  5. Get a clean medium bowl
  6. Add egg yolk
  7. Add sugar
  8. Whisk until pale and light - approx 2 min
  9. Transfer milk mixture to mixture gradually
  10. Heat until thickened while stirring occasionally - medium heat
  11. Remove then set aside
  12. Prepare a clean baking dish with ice water
  13. Submerge content of stainless steel bowl in baking dish
  14. Strain saucepan into stainless steel bowl
  15. Stir until completely cool
  16. Add kefir cultured milk
  17. Churn in ice cream maker
  18. Freeze until firm - 1 hr
