For these chicken wings, I added a generous 1/2 cup of Sriracha to the marinade for a good amount of heat. After marrying with the other ingredients and caramelizing after cooking, it turned out to mellow the heat a bit. However, if you’re not one for a lot of heat, feel free to reduce the amount in the recipe or omit it and serve the Sriracha on the table as a dipping sauce. Marinate for a few hours, or overnight. This recipe works on the grill or smoker as well - just watch for flareups!

Step preview

  1. Add chicken wings to a clean large resealable plastic bag
  2. Add honey, sesame oil, kosher salt, sriracha sauce, ketchup, soy sauce, ginger, marmalade, cilantro, lime and white wine vinegar to a clean medium bowl
  3. Whisk until smooth
  4. Transfer marinade to chicken
  5. Shake until coated
  6. Let rest overnight in fridge
  7. Pre-heat - 190°C
  8. Grease a clean baking pan
  9. Transfer chicken to baking pan
  10. Bake - 55 min, 190°C
  11. Serve
