Tea Brack Loaf. Fairly light weight. Nice moist fruity flavours that will improve if stored in an airtight tin for a week.

Ingredients

  • Dried mixed fruit icon

    200g (about 1½ cups)

Step preview

  1. Place a clean large mixing bowl on Drop Scale
  2. Add dried mixed fruit, tea and granulated sugar to the large mixing bowl
  3. Soak overnight
  4. Pre-heat oven - 170°C
  5. Grease a clean rectangular pan
  6. Add egg, marmalade and self raising flour to the batter
  7. Transfer content of small bowl to batter
  8. Mix in well until combined
  9. Transfer batter to rectangular pan
  10. Bake - 1 hr 15 min, 170°C
  11. Let cool slightly - 10 min
  12. Transfer onto cooling rack
  13. Serve
