Tea Brack Loaf. Fairly light weight. Nice moist fruity flavours that will improve if stored in an airtight tin for a week.

Step preview

  1. Place a clean large mixing bowl on Drop Scale
  2. Add tea
  3. Add dried mixed fruit
  4. Add granulated sugar
  5. Soak overnight
  6. Pre-heat - 170°C
  7. Grease a clean rectangular pan
  8. Place large mixing bowl on Drop Scale
  9. Add beaten egg
  10. Add marmalade
  11. Add self raising flour
  12. Transfer small bowl to batter
  13. Mix in well until combined
  14. Transfer batter to rectangular pan
  15. Bake - 1 hr 15 min, 170°C
  16. Let cool slightly - 10 min
  17. Transfer onto cooling rack
  18. Serve
