Tea Brack Loaf. Fairly light weight. Nice moist fruity flavours that will improve if stored in an airtight tin for a week.

  • Dried mixed fruit icon
    Dried mixed fruit200 g
  • Tea icon
    Tea125 ml
  • Granulated sugar icon
    Granulated sugar100 g
  • Egg icon
    Egg1beaten
  • Self raising flour icon
    Self raising flour200 g
  • Marmalade icon
    Marmalade2 tablespoons
    Method

  • 1. Add dried mixed fruit, tea and granulated sugar to a clean large mixing bowl
  • 2. Soak overnight
  • 3. Pre-heat oven - 170°C / 340°F
  • 4. Grease a clean rectangular pan
  • 5. Add egg, self raising flour and marmalade to the soaked fruits
  • 6. Mix in well until combined
  • 7. Pour into rectangular baking receptacle
  • 8. Bake - 1 hr 15 min, 170°C / 340°F
  • 9. Let cool slightly - 10 min
  • 10. Transfer onto cooling rack
  • 11. Serve
