Jocon de pollo is a chicken and tomatillo stew. It is a classic Guatemalan dish, heavily influenced by Mayan culture in Guatemala. It is a fusion of ingredients the Maya have been enjoying for centuries. Traditionally, jocon de pollo is eaten with rice alongside it, but depending on the thickness and consistency of your chicken and sauce, it can very well be served on its own as a sort of stew too. Jocon de pollo is a fun, colorful and super flavorful dish to try, especially since it’s incredibly easy to make.

Step preview

  1. Get a clean large saucepan
  2. Add sesame seeds
  3. Toast then set aside - approx 2 min, medium heat
  4. Replace on drop
  5. Add olive oil
  6. Add coarsely chopped onion
  7. Cook until softened and continue - approx 2 min
  8. Get a clean large mixing bowl
  9. Add chopped garlic clove
  10. Add coarsely chopped yellow bell pepper
  11. Add coarsely chopped jalapeño pepper
  12. Add coarsely chopped cilantro
  13. Add chopped green onion
  14. Add hulled, quartered tomatillo
  15. Mix briefly until combined
  16. Transfer vegetables to large saucepan
  17. Cook until softened - 4 min
  18. Get a clean glass measuring cup
  19. Add chicken stock
  20. Transfer liquid to large saucepan
  21. Simmer while stirring occasionally - 5 min
  22. Transfer content of large saucepan to blender jug carefully
  23. Blend until smooth then set aside
  24. Get large saucepan
  25. Add olive oil
  26. Heat - medium heat
  27. Get a clean medium bowl
  28. Add chopped chicken thighs
  29. Season with salt & pepper generously
  30. Transfer chicken to large saucepan
  31. Sear each side - approx 3 min
  32. Transfer sauce to large saucepan and cover
  33. Simmer while stirring occasionally - 15 min
  34. Sprinkle with juice of lime
  35. Garnish with green onion
  36. Serve
