The classic (and festive!) cinnamon-flavoured sugar cookie. Chewy and almost cake-like in the middle with just the right amount of crunch around the edges.

    INGREDIENTS


  • Plain flour icon

    385 g (about 3 cups)

    6 g (about 1 ¼ teaspoons)

  • Unsalted butter icon

    225 g (about 1 cup)room temperature

    300 g (about 1 ½ cups)

  • Egg icon

  • Ground cinnamon icon

    5 g (about 1 ⅞ teaspoons)

    METHOD


  • 1. Add plain flour, baking powder and salt to a clean medium bowl
  • 2. Whisk briefly until combined
  • 3. Add unsalted butter and sugar to a clean large mixing bowl
  • 4. Cream - approx 2 min
  • 5. Add egg to the dough
  • 6. Mix until combined
  • 7. Transfer dry ingredients to dough
  • 8. Mix until dough forms
  • 9. Chill in fridge - 20 min
  • 10. Pre-heat oven - 174°C
  • 11. Line a clean baking sheet with parchment paper
  • 12. Add sugar and ground cinnamon to a clean small bowl and mix
  • 13. Form into balls
  • 14. Roll dough in sugar mixture
  • 15. Transfer content of large mixing bowl to baking sheet
  • 16. Press gently
  • 17. Bake until browned at edges - 14 min, 174°C
  • 18. Transfer onto cooling rack
