    Method

  • 1. Spread each slice of bread with about a tablespoon of peanut butter (or more)
  • 2. Top two of the slices with the bananas, then drizzle with honey
  • 3. Stack the slices together to form two sandwiches
  • 4. Whisk together the eggs, cream, vanilla, nutmeg, rum, and salt in a shallow bowl
  • 5. Add butter to a clean medium cast iron skillet
  • 6. Heat a large skillet over medium-high heat
  • 7. Grease with butter or cooking spray
  • 8. Soak all sides of the sandwiches in the egg mixture, then place on the griddle or skillet
  • 9. Cook 3-4 minutes on each side, or until golden brown
  • 10. Remove to a cutting board and halve diagonally
  • 11. Serve with sifted powdered sugar and warm syrup
