This Thermomix Pea and Mint Soup is perfect to warm the soul on a cold dreary day. Made with just a handful of ingredients and ready on the table in under 30 minutes, it’s a nourishing bowl of green goodness.

    Method

  • 1. Add spring onion and garlic clove to the TM5 bowl
  • 2. Chop - approx 5 sec, speed 3
  • 3. Scrape down sides of TM5 bowl
  • 4. Add olive oil to the TM5 bowl
  • 5. Sauté - approx 3 min, 37°C, speed 1
  • 6. Then add frozen peas, potato and vegetable stock to the TM5 bowl
  • 7. Cook with MC in place until cooked through - approx 15 min, 37°C, speed 1
  • 8. Then add mint leaves to the TM5 bowl
  • 9. Blend gradually with MC in place - approx 1 min 30 sec, speed 8
  • 10. Then season with black pepper
  • 11. Serve immediately with some fresh mint leaves garnished on top
