    METHOD


  • 1. Pre-heat oven - 170°C
  • 2. Line a clean muffin pan in paper liners
  • 3. Add salted butter, plain flour, light brown sugar, ground cinnamon and rolled oats to a clean medium bowl
  • 4. Mix firmly until coarse crumbs form then set aside
  • 5. Add salted butter to a clean small bowl
  • 6. Heat until melted then set aside - Power Level 3
  • 7. Add banana to a clean large mixing bowl
  • 8. Mash
  • 9. Add granulated sugar and egg to the batter
  • 10. Transfer content of small bowl to batter and mix
  • 11. Add plain flour, baking powder, bicarbonate of soda and salt to a clean medium bowl
  • 12. Whisk briefly until blended
  • 13. Fold dry ingredients into batter briefly
  • 14. Spoon batter into muffin pan
  • 15. Sprinkle topping with muffins
  • 16. Bake until skewer tests clean - 22 min, 170°C
