Dark, creamy chocolate truffles infused with vanilla and your favourite dark rum. (Gluten-Free)

  • Heavy cream icon

    150 g (about ½ cup)

    400 g (about 2 ¼ cups)chopped

    250 g (about 1 cup)softened

  • Rum icon

    50 g (about 3 ½ tablespoons)

  • Cocoa powder icon

    50 g (about ½ cup)

    METHOD


  • 1. Add heavy cream, vanilla bean pod and granulated sugar to a clean saucepan
  • 2. Heat until dissolved
  • 3. Add chocolate 70% to a clean large mixing bowl
  • 4. Pour cream into chocolate mixture
  • 5. Mix slowly until smooth
  • 6. Add unsalted butter to a clean small bowl
  • 7. Cream until smooth
  • 8. Add content of small bowl to chocolate mixture
  • 9. Add rum to the chocolate mixture
  • 10. Mix until well combined
  • 11. Refrigerate in fridge until set - 1 hr
  • 12. Add cocoa powder to a clean small bowl
  • 13. Form chocolate mixture with tablespoon
  • 14. Roll
