Apart from the fact that I LOVE baked veggies they are incredibly easy to do, and can include anything that you wish to use up! Once baked they hold well in the fridge for a few days so can be “reinvented” into other meals for quick and tasty dinners when time is short.

Step preview

  1. Pre-heat oven - 180°C
  2. Add red bell pepper, courgette, red onion, carrot, asparagus, apple and pear to a clean large mixing bowl
  3. Drizzle with olive oil
  4. Stir well with slotted spoon until coated
  5. Transfer content of large mixing bowl to baking sheet
  6. Sprinkle with sea salt, black pepper and mixed dried herbs
  7. Arrange grape tomato in the baking sheet
  8. Bake until light golden - 50 min, 180°C
  9. Remove
  10. Cover with foil
  11. Uncover
  12. Season
  13. Serve
