A very easy and delicious meal that you can stretch to feed the mob or scale down for just 2 people. With or without the flat bread to accompany. Enjoy!

    Method

  • 1. Add grape tomato, Thai basil, coriander, fresh basil leaves, mint leaves, spring onion and mixed salad leaves to a clean large mixing bowl
  • 2. Add garlic clove, fresh chilli, green chilli, coconut sugar, sea salt and coriander to the TM5 bowl
  • 3. Chop with MC in place - 5 sec, speed 8
  • 4. Then add mayonnaise and lime juice to the dressing
  • 5. Blend with MC in place - 5 sec, speed 5
  • 6. Toss the salad leaves with most of the dressing, just as you are ready to serve
  • 7. Top with chicken breast and fresh chili and drizzle with remaining dressing
  • 8. Serve with lime
