Method
1. Add butter, coriander and sea salt to the TM5 bowl
2. Blend - approx 30 sec, speed 6
3. Scrape down sides of TM5 bowl
4. Shape a clean plate into a log
5. Wrap with plastic wrap
6. Chill in fridge
7. Transfer fish to plate
8. Add extra virgin olive oil, coconut sugar, fish sauce, fresh chilli and lime to a clean small bowl
9. Stir with tablespoon until sugar has dissolved
10. Line a clean work surface with foil
11. Arrange lemongrass stalk in the work surface
12. Add fish fillet to the work surface
13. Drizzle fish with content of small bowl
14. Top with lime and ginger
15. Wrap with foil
16. Add water to the TM5 bowl
17. Transfer fish to steamer tray
18. Set the varoma dish
19. Place content of steamer tray on varoma dish
20. Steam until just cooked - approx 15 min, Varoma, speed 3
21. Transfer fish to serving plate
22. Serve butter with serving plate
23. Top with coriander and fresh chilli
24. Serve
