Method
1. Add glutinous rice to a clean medium bowl
2. Soak with water - approx 1 hr (but no longer)
3. Drain and transfer rice to TM5 bowl
4. Add golden caster sugar, water, coconut cream and pink Himalayan salt flakes
5. Cook - approx 25 min, 100°C, reverse speed 1
6. Set aside in a seperate bowl
7. Without cleaning, add coconut cream, golden caster sugar and pink Himalayan salt flakes to the TM5 bowl
8. Cook - approx 7 min, 100°C, speed 3
9. Remove from bowl and set aside
10. Without cleaning the bowl, place the mango and lime juice into Thermomix bowl
11. Blend with MC fitted - approx 30 sec, speed 8
12. Scrape down sides of TM5 bowl
13. The mango should be blended into a silky smooth texture. Repeat blending if needed
14. To assemble, place some of the cooked rice into each serving glass, followed by the mango puree, then lashings of the coconut syrup and garnish with the mango cubes
