    Method

  • 1. Add star anise pod, vanilla bean, golden caster sugar, loose thai tea and water to the TM5 bowl
  • 2. Boil - 10 min, 100°C, speed 1
  • 3. Allow to infuse for as long as you can but for at least 15 minutes
  • 4. Strain out solids and return to Thermomix bowl
  • 5. Dilute with cold water to taste, up to 1L
  • 6. Add single cream and condensed milk to the TM5 bowl
  • 7. Blend with MC in place - 10 sec, speed 8
  • 8. Chill in fridge - approx 3 hr
  • 9. Serve with ice
