    Method

  • 1. Crack eggs into a medium bowl
  • 2. Whisk
  • 3. Add zucchini to the bowl
  • 4. Add fresh parsley, coconut flour, psyllium husk powder and sea salt
  • 5. Mix until combined
  • 6. Heat a clean medium cast iron skillet - medium heat
  • 7. Add extra virgin olive oil to the skillet
  • 8. Pour about 1/4 of the fritter mixture onto the pan and lightly press down with the back of a spatula
  • 9. Cook for a few minutes each side until browned and cooked through
  • 10. Repeat steps 4-5 for the remaining of the mixture
  • 11. Serve up on their own, or add a fresh salad, or top with smoked salmon or a poached egg for a larger meal
