These healthy, low carb and gluten free fritters are perfect for any meal, any time of day! Containing a serve of protein and healthy fats from the eggs and coconut flour, and packed with fibre thanks to the psyllium husk and coconut flour, these fritters will keep you feeling full and satisfied.

Step preview

  1. Add egg to a clean medium bowl
  2. Whisk
  3. Add courgette to the medium bowl
  4. Add fresh parsley, coconut flour, psyllium husk powder and sea salt to the medium bowl
  5. Mix until combined
  6. Heat a clean medium cast iron skillet - medium heat
  7. Add extra virgin olive oil to the medium cast iron skillet
  8. Transfer one quarter of content of medium bowl to medium cast iron skillet and press down
  9. Cook until cooked through - approx 4 min
  10. Repeat
  11. Serve
