Gluten free overnight pancakes are not only delicious, they are pretty easy to make, you just have to think ahead a little. That's the hardest part!

  • Almonds icon
    Almonds150 g
  • Kefir cultured milk icon

  • Bicarbonate of soda icon

    Method

  • 1. Just before going to bed add almonds to the TM5 bowl
  • 2. Blend with MC on - 10 sec, speed 10
  • 3. Then add kefir cultured milk, eggs, salt flakes and vanilla bean paste
  • 4. Blend with MC on - 10 sec, speed 6
  • 5. Scrape down sides of TM5 bowl
  • 6. Chill overnight in fridge
  • 7. In the morning, heat a fry pan on meium heat/Induction 6 for at least 10 minutes
  • 8. Remove Thermomix bowl from fridge
  • 9. Add baking soda
  • 10. Blend with MC on - 6 sec, speed 6
  • 11. Melt a little butter in heated frypan
  • 12. Pour a small amount of the batter into the centre of the fry pan and allow to cook until bubbles come through
  • 13. Carefully flip and cook on both sides. They are a little more delicate than normal pancakes as well, so be gentle
  • 14. Serve immediately with hot berry sauce, a little yoghurt or cream and a dusting of icing sugar
