Ingredients

Step preview

  1. Add plain flour, golden caster sugar and butter to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Mix - approx 5 sec, speed 5
  4. Then add egg yolk, crème fraîche and vanilla bean paste to the TM5 bowl
  5. Mix - approx 10 sec, speed 5
  6. Turn out on lightly-floured surface
  7. Press a clean lightly floured surface
  8. Transfer content of lightly floured surface to round pan
  9. Press
  10. Trim
  11. Freeze - 20 min
  12. Pre-heat oven - 180°C
  13. Add with baking beans
  14. Bake - 20 min, 180°C
  15. Remove
  16. Remove baking beans
  17. Reduce - 160°C
  18. Add golden caster sugar and lime to the TM5 bowl
  19. Blitz - approx 10 sec, speed 10
  20. Then add egg, crème fraîche and cornflour to the TM5 bowl
  21. Place frozen raspberries on the round pan
  22. Mix TM5 bowl - approx 10 sec, speed 5
  23. Get pastry
  24. Pour content of TM5 bowl into pastry
  25. Bake until just set - 40 min, 160°C
  26. Garnish with raspberries and lime
  27. Serve
