  1. Prep and set aside butter: cold
  2. Prep and set aside lime: zest of & juice of

  4. Fit the TM5 bowl to TM5
  5. Add plain flour
  6. Add golden caster sugar
  7. Add prepared butter
  8. Mix - approx 5 sec, speed 5
  9. Add egg yolk
  10. Add crème fraîche
  11. Add vanilla bean paste
  12. Mix - approx 10 sec, speed 5
  13. Turn out on lightly-floured surface
  14. Press a clean lightly floured surface
  15. Transfer content of lightly floured surface to round pan
  16. Press
  17. Trim
  18. Freeze - 20 min
  19. Pre-heat - 180°C
  20. Add with baking beans
  21. Bake - 20 min, 180°C
  22. Remove
  23. Remove baking beans
  24. Reduce - 160°C
  25. Add golden caster sugar to the TM5 bowl
  26. Add prepared lime
  27. Blitz - approx 10 sec, speed 10
  28. Add egg
  29. Add crème fraîche
  30. Add cornflour
  31. Get round pan
  32. Place frozen raspberries
  33. Mix TM5 bowl - approx 10 sec, speed 5
  34. Get pastry
  35. Pour content of TM5 bowl into pastry
  36. Bake until just set - 40 min, 160°C
  37. Garnish with raspberries
  38. Garnish with prepared lime
  39. Serve
