If you are after a cooling drink for those curry nights, this is the ticket. And so pretty as well! We have used Thai basil, but you can use any basil.
Ingredients
Pistacchios20 gshelled, coarsely chopped
Greek yogurt500 g
Coconut milk200 ml
Thai basil1 handfulleaves of, plus more for garnish
Runny honey50 g
Method
1. Add greek yogurt, milk, 6 Thai basil leaves and honey to the TM5 bowl
2. Blend with MC in place until well combined - speed 10
3. Serve garnished with the pistachios and a basil leaf
