Layers of sweet orange and custardy vanilla make up this refreshing summery dessert. It's based on a retro Mexican favorite called "gelatina de leche."

Step preview

  1. Add egg yolk, white sugar, milk and vanilla bean paste to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Cook - approx 8 min, 80°C, speed 4
  4. Add gelatine and water to a clean small bowl
  5. Stir with tablespoon
  6. Transfer gelatin to TM5 bowl
  7. Blend - approx 20 sec, speed 6
  8. Pour content of TM5 bowl into 8 drinking glasses halfway
  9. Refrigerate in fridge until set
  10. Add orange juice, coconut sugar and lemon juice to the TM5 bowl
  11. Cook with MC in place - approx 8 min, 80°C, speed 2
  12. Add gelatine and water to a clean small bowl
  13. Stir with tablespoon
  14. Transfer gelatin to TM5 bowl
  15. Blend - approx 20 sec, speed 6
  16. Then add orange and orange juice to the TM5 bowl
  17. Stir - approx 4 sec, speed 3
  18. Pour content of TM5 bowl into 8 drinking glass
  19. Refrigerate in fridge until set - 3 hr
  20. Serve
