  2. Add whole milk
  3. Add single cream
  4. Add sea salt
  5. Cook - approx 13 min, 100°C, speed 2
  6. Cook - approx 13 min, 50°C, speed 2
  7. Add lemon juice
  8. Stir - approx 3 sec, speed 2
  9. Add lemon juice
  10. Stir - approx 3 sec, speed 2
  11. Add lemon juice
  12. Stir - approx 3 sec, speed 2
  13. Let rest - approx 30 min
  14. Line a clean sieve with muslin cloth
  15. Transfer mixture to sieve
  16. Drain slowly with sieve
  17. Squeeze
  18. Wrap into a ball
  19. Garnish with lemon zest
  20. Garnish with chilli flakes
