Ingredients

  • Whole milk icon

    1.5 liters (1650g)
  • Single cream icon

    200ml (¾ cup)
  • Sea salt icon

    60g (about 2⅛)
  • Lemon zest icon

  • Chilli flakes icon

Step preview

  1. Add whole milk, single cream and sea salt to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Cook - approx 13 min, 100°C, speed 2
  4. Cook - approx 13 min, 50°C, speed 2
  5. Then add lemon juice to the mixture
  6. Stir - approx 3 sec, speed 2
  7. Then add lemon juice to the mixture
  8. Stir - approx 3 sec, speed 2
  9. Then add lemon juice to the mixture
  10. Stir - approx 3 sec, speed 2
  11. Let rest - approx 30 min
  12. Line a clean sieve with muslin cloth
  13. Transfer mixture to sieve
  14. Drain slowly with sieve
  15. Squeeze
  16. Wrap into a ball
  17. Garnish with lemon zest and chilli flakes
