Step preview

  1. Pre-heat grill - medium-high heat
  2. Add wholegrain mustard, sherry vinegar and runny honey to a clean large mixing bowl
  3. Mix until mixture comes together
  4. Add tomato and red onion to the salad
  5. Stir until well combined then set aside
  6. Get a clean baking sheet
  7. Line with parchment paper
  8. Add cod fillet to the baking sheet
  9. Brush with olive oil
  10. Season with salt & pepper
  11. Grill each side until cooked through - 4 min, medium-high heat
  12. Add black olives, anchovies, capers, garlic clove and fresh thyme to a clean food processor bowl
  13. Pulse until just combined
  14. Stir in olive oil and red wine vinegar to the food processor bowl
  15. Serve
