Step preview

  1. Prep and set aside tomato: halved
  2. Prep and set aside red onion: finely sliced
  3. Prep and set aside black olives: stoned
  4. Prep and set aside anchovies: drained
  5. Prep and set aside capers: drained & rinsed
  6. Pre-heat on medium-high heat
  7. Get a clean large mixing bowl
  8. Add wholegrain mustard
  9. Add sherry vinegar
  10. Add honey
  11. Mix until mixture comes together
  12. Add prepared tomato
  13. Add prepared red onion
  14. Stir until well combined then set aside
  15. Get a clean baking sheet
  16. Line with parchment paper
  17. Add cod fillet
  18. Brush with olive oil
  19. Season with salt & pepper
  20. Grill each side for 4min on medium-high heat until cooked through
  21. Get a clean food processor bowl
  22. Add prepared black olives
  23. Add prepared anchovies
  24. Add prepared capers
  25. Add garlic clove
  26. Add fresh thyme
  27. Pulse until just combined
  28. Stir in olive oil
  29. Stir in red wine vinegar
  30. Serve
