Classic Leek and Potato Soup is taken to a new and delicious level with the addition of rich, salty Stilton and crispy bacon on top. If you can't get your hands on Stilton, feel free to use your favorite blue cheese. And simply leave out the bacon for a vegetarian version!

Step preview

  1. Prep and set aside leek: finely sliced
  2. Prep and set aside bacon: diced
  3. Prep and set aside potato: diced
  4. Prep and set aside bacon: diced
  5. Prep and set aside stilton cheese: crumbled
  6. Get a clean large cast iron skillet
  7. Add butter
  8. Add sunflower oil
  9. Heat
  10. Add prepared leek
  11. Add prepared bacon
  12. Add prepared potato
  13. Fry on medium heat until light golden
  14. Add vegetable stock
  15. Add salt & pepper carefully
  16. Boil
  17. Transfer content of large cast iron skillet to slow cooker bowl
  18. Cook for 5h 30min on low heat
  19. Stir in milk
  20. Get a clean baking pan
  21. Add prepared bacon
  22. Broil until crispy
  23. Cut into pieces then set aside
  24. Purée soup with stick blender
  25. Add heavy cream
  26. Add rind removed, diced stilton cheese
  27. Transfer bacon to soup
  28. Season to taste
  29. Serve
  30. Sprinkle with prepared stilton cheese
