  1. Prep and set aside red bell pepper: cored, deseeded & diced
  2. Prep and set aside carrot: diced
  3. Prep and set aside potato: diced
  4. Prep and set aside garlic: chopped
  5. Prep and set aside tinned red kidney beans: drained & rinsed
  6. Prep and set aside green beans: sliced
  7. Prep and set aside okra: sliced
  8. Get a clean large cast iron skillet
  9. Add sunflower oil
  10. Heat - medium heat
  11. Add chopped onion
  12. Fry until softened - 5 min, medium heat
  13. Add prepared red bell pepper
  14. Add prepared carrot
  15. Add prepared potato
  16. Add prepared garlic
  17. Fry - 3 min
  18. Add cajun seasoning
  19. Add tinned chopped tomatoes
  20. Add brown sugar
  21. Season with salt & pepper well
  22. Heat until just boiling
  23. Transfer content of large cast iron skillet to slow cooker bowl
  24. Add prepared tinned red kidney beans
  25. Add hot vegetable stock
  26. Mix and cover
  27. Cook - 8 hr, low heat
  28. Add prepared green beans
  29. Add prepared okra
  30. Cook - 30 min
  31. Serve
