Step preview

  1. Add sunflower oil to a clean large cast iron skillet
  2. Heat - medium heat
  3. Add onion to the large cast iron skillet
  4. Fry until softened - 5 min, medium heat
  5. Add red bell pepper, carrot, potato and garlic to the large cast iron skillet
  6. Fry - 3 min
  7. Add cajun seasoning, tinned chopped tomatoes and brown sugar to the large cast iron skillet
  8. Season with salt & pepper well
  9. Heat until just boiling
  10. Transfer content of large cast iron skillet to slow cooker bowl
  11. Add tinned red kidney beans and vegetable stock to the slow cooker bowl
  12. Mix and cover
  13. Cook - 8 hr, low heat
  14. Add green beans and okra to the slow cooker bowl
  15. Cook - 30 min
  16. Serve
