These feta-stuffed peppers are utterly indulgent and delicious. Serve with a salad as a tasty lunch.

    Method

  • 1. Add sweet pepper to a clean baking sheet
  • 2. Rub olive oil onto the peppers
  • 3. Grill until softened - 5 min, Grill 2
  • 4. Remove to a cutting board and let cool slightly
  • 5. Slice peppers lengthwise
  • 6. Add egg yolk, feta cheese, plain yogurt and lemon to a clean food processor bowl
  • 7. Blend until smooth
  • 8. Spoon cheese mixture into baking sheet
  • 9. Crumble feta cheese over the baking sheet
  • 10. Sprinkle with dried oregano
  • 11. Grill until light golden - 7 min, Grill 2
  • 12. Serve
