  1. Prep and set aside water: boiling
  2. Prep and set aside garlic clove: peeled
  3. Prep and set aside bread slices: torn
  4. Prep and set aside onion: chopped
  5. Prep and set aside chicken breast: boned, skinned & sliced
  6. Prep and set aside almonds: toasted & flaked
  7. Prep and set aside fresh parsley: chopped
  8. Get a clean heatproof bowl
  9. Add saffron threads
  10. Pour prepared water
  11. Set aside
  12. Get a clean frying pan
  13. Add olive oil
  14. Heat in frying pan
  15. Add prepared garlic clove
  16. Add prepared bread slices
  17. Add blanched almonds
  18. Cook in frying pan until light golden - approx 2 min
  19. Transfer content of frying pan to medium bowl then set aside
  20. Retrieve frying pan
  21. Get medium bowl
  22. Add olive oil
  23. Add prepared onion
  24. Cook in frying pan until soft - approx 6 min
  25. Add dry white wine
  26. Add chicken stock
  27. Heat in frying pan
  28. Add bay leaves
  29. Transfer water to frying pan
  30. Season
  31. Simmer in frying pan until liquid has evaporated - 10 min
  32. Let cool slightly
  33. Transfer content of medium bowl to food processor bowl
  34. Transfer content of frying pan to sauce
  35. Blend until smooth
  36. Add lemon juice to taste
  37. Keep warm
  38. Prepare a clean work surface
  39. Add prepared chicken breast
  40. Rub olive oil
  41. Season with salt & pepper well
  42. Retrieve frying pan
  43. Heat frying pan
  44. Transfer chicken to frying pan
  45. Cook in frying pan until cooked through - 10 min
  46. Transfer content of frying pan to serving plate
  47. Spoon sauce into serving plate
  48. Sprinkle with prepared almonds
  49. Garnish with prepared fresh parsley
