Step preview

  1. Add saffron threads to a clean heatproof bowl
  2. Pour water into the water
  3. Set aside
  4. Add olive oil to a clean frying pan
  5. Heat in frying pan
  6. Add garlic clove, bread slices and blanched almonds to the frying pan
  7. Cook in frying pan until light golden - approx 2 min
  8. Transfer content of frying pan to medium bowl then set aside
  9. Retrieve frying pan
  10. Add olive oil and onion to the medium bowl
  11. Cook in frying pan until soft - approx 6 min
  12. Add dry white wine and chicken stock to the medium bowl
  13. Heat in frying pan
  14. Add bay leaves to the medium bowl
  15. Transfer water to frying pan
  16. Season
  17. Simmer in frying pan until liquid has evaporated - 10 min
  18. Let cool slightly
  19. Transfer content of medium bowl to food processor bowl
  20. Transfer content of frying pan to sauce
  21. Blend until smooth
  22. Add lemon juice to the sauce to taste
  23. Keep warm
  24. Add chicken breast to a clean work surface
  25. Rub olive oil onto the chicken
  26. Season with salt & pepper well
  27. Retrieve frying pan
  28. Heat frying pan
  29. Transfer chicken to frying pan
  30. Cook in frying pan until cooked through - 10 min
  31. Transfer content of frying pan to serving plate
  32. Spoon sauce into serving plate
  33. Sprinkle with almonds
  34. Garnish with fresh parsley
